Coconut Muffins - Collaboration on 3/30/2007



2 cups flour
teaspoon salt
1 TBS baking powder
cup sugar
1/3 cup butter, melted
1 egg
1 small can (5.6 oz) Coconut Milk
Enough milk in combination with coconut milk to make 1 cup
cup coconut
cup dried cherries
cup pecan pieces
Mix the first 4 dry ingredients together in one bowl and mix the wet ingredients together in another bowl.

Add the wet ingredients to the dry ingredients and mix together with a spoon briefly. Fold in coconut, cherries and nuts

Bake in paper muffin cups for 20 minutes in a 400 degree oven. Makes one dozen muffins.
