 The 11 Secret Spices


One of the first things I ever did after I first learned how to channel and was let loose upon the world of Spirit was to ask Colonel Harland Sanders just what was involved with the 11 secret herbs and spice mixture that went into making the world-famous Kentucky Fried Chicken. 

He told me. And, I wrote it down. And, I actually don't remember what I did with that list, because it just didn't look right. I was still a little in awe of the folks in Spirit I talked to…at least, I was more polite than I am now, and it took me a little bit before I said to him, "Uh, excuse me Colonel, but this doesn't look right." I already knew I didn't have a clue about what the secret mixture was, but I would bet dollars to donuts it didn't include cinnamon. He said, "What can I say? I always wanted to try that one out."

Note from Pauline 8/2/26: I just transferred this bit from the Old TalkingtoSpirit website. Where is the list? I have no idea. I can't rebuild it because I don't remember what it was and I don't have it written down anywhere. 

You could probably look online to find a copycat list of the spices involved. I'm betting that salt and pepper would almost certainly be on the list. Onion and garlic powder would probably also be on the list. Celery salt? Perhaps. Oh, paprika. Yes, definitely, I would think paprika would be a part of it. But that is only six ingredients.

How to proceed with the recipe? If I were doing it, I believe I'd want to marinate the chicken in something. Milk? What about eggs? Would I flour the meat, dip it into some sort of liquid bath, and then roll it around in breadcrumbs? How to make it? Fry? Oven? 

You've likely got a favorite way to prepare chicken in your family. Maybe look at that recipe first or just go out and eat some KFC Original and do a little taste deconstruction for yourself. I suppose I could ask the Colonel if he'd like to give us a list of spices.

This is Harland. Yes, I would be happy to give you a list. And, yes, cinnamon definitely holds a place.

Think Spring. 

  1. Salt
  2. Pepper
  3. Beaumond Seasoning (or make your own with garlic and onion powder and some celery powder)
  4. Lemon zest - ground to a powder
  5. Cinnamon - just a little bit
  6. Paprika
  7. Powdered poultry seasoning
  8. Sage
  9. Old Bay Seasoning
  10. Thyme
  11. Basil
Consider using cornstarch to help with the crispiness of the chicken. Fry twice or bake and fry.
